Summer Evening Dinner Party

It's been so rainy all summer, we haven't even had a chance to host any outdoor dining at our place. Luckily a long-planned dinner party with all my old workmates coincided with one of the nicest evenings we've had all summer and we could eat outside.

I excitedly laid out the tables in the backyard:

It was an excellent dinner party, but I totally forgot to take any pictures. AGAIN! I keep thinking that as my blog goes on, I'll get better at keeping out the camera knowing that I'll need pictures to post. So far that theory has been a bust. Never mind, I'll just describe it.

I made two lasagnas. One was vegetarian with flame roasted eggplant and peppers, fried zucchini and mushrooms, homemade tomato sauce (from fresh tomatoes) and ricotta cheese mixed with chopped spinach, basil and parmesan. The second was meat. I made a ragu using onions, beef, white wine and tomato paste. I cooked it down for several hours and then added some cream. The lasagna was the ragu, the ricotta mixture and whole roasted cherry tomatoes. Both were super delicious if I may say so myself, and I may because I certainly ate enough of them.

For dessert I attempted my first ever Chocolate Cream Pie. I did manage to take a terrible picture of this:

It wasn't the most professional looking baked good I've ever turned out, but it was awesome. Like pudding pie really. We ate the entire thing and then cleaned the dish.

It was really nice to catch up with all of my old colleagues. It made me miss work. Almost. Actually, it made me miss Friday afternoons. I'm too excited about starting my Masters to miss work much at all.

Today I took the train out to see the campus where I'll be attending school starting in two weeks. Seeing the campus really made it sink in and I'm totally excited now. The countdown is most definitely on.
